Flavouring a Sponge Cake with Quince Jelly
I made a sponge over the weekend. I didn't have any beautiful warm weather bounty such as strawberries or raspberries. I did, however, have some of my quince paste left. After I had beaten the cream, I added some of the quince paste to it. It gave it a lovely flavour, but it was very subtle.
So I spread a layer of the jelly between the two cakes for added flavour. It was yummy! I heard Miss four telling her siblings that it was the best cake ever.
